15 Minute Hearty Soup

Eating healthy can be discouraging. It seems like all the good recipes are a lot of work or just take too much time. There are plenty of healthy recipes that you can make if you are pressed for time. We have your solution! Try our 15 minute hearty soup.

 

Prep Time: 15 minutes

Cook Time: 20 minutes

Serving: 6 Large Bowls of Soup

Ingredients-

32 oz of Chicken stock (hopefully organic)

2 Medium Onions

2 Medium Zucchini

3 Stalks of Celery

1 Medium Potatoes

1 15 oz Can of White Beans

1 32 oz Can Diced Tomatoes

2 Cups Fresh Spinach 

1 tbsp of Dried Basil

Salt and Pepper To Taste

Directions

Cut onions, zucchini, celery and potatoes into bite-size pieces. Pour broth into large pan and turn heat to med. Add vegetables, cover and cook for 10 min. Add beans, tomatoes, spinach, basil and salt and pepper. Cook additional 10 minutes or until vegetables are soft. 

 

Option: 

Add cooked chicken for a heartier meal with extra protein.
