I am always looking for ways to save time and money when I cook. I love these recipes because not only are they fairly affordable, I saved a ton of time cooking them.
I was at the store the other day and they had a great deal on Organic Asparagus so I bought a bunch of it (I'm talking about 4 pounds!!). What started out as an appetizer, turned into all sorts of great tasting, healthy recipes. If you don't like asparagus you could substitute broccoli, zucchini, red peppers.... almost any type of vegetable!
I started with the asparagus roll-up appetizer. Cut it up to make an egg scramble, then a turkey and asparagus crepe. I still had more asparagus left so I made some Cream of Asparagus Soup and a Salad with Asparagus, Goat Cheese, Slivered Almonds with a Lemon Vinaigrette. A little bonus was a fairly healthy banana, chocolate crepe. It all started with a sale on asparagus.
Remember, part of my eating healthy on a shoestring from last week was to buy extra when someone is on sale!!
