Healthy Breakfast: Veggies with a Poached Egg

Pour broth in a small frying pan and add spinach, mushrooms and tomatoes. Cook over medium heat stirring often. Crack egg and gently pour on top of vegetables. Cover pan with a lid. Cook for approximately 4 min. or until egg is cooked. Garnish with whatever herbs or spices you like best, or serve with an optional side of avocado for even more flavor!
