- 5 cups frozen corn- thawed and drained
- 1/3 cup diced bacon- approximately 4 strips
- 1 white onion- rough chopped
- 2 tbs ground cumin
- 2 and 1/2 quarts water
- 1 large jalapeño chile
- 1 tbs salt
- 1 and 1/2 tbs lime juice
In a pot, saute onion and bacon until onion is translucent. Add cumin and cook for another couple minutes.
Put corn in with onion, add water and jalapeño. Simmer for 20 minutes. Puree on high speed for 3 to 4 minutes. Add salt and lime juice. Enjoy!
