• 2.5 Cups Walnuts, Pecans or Almonds
  • 1.5 Cups Dates, Pitted and Stems Removed
  • 1/4 Cup Coconut Oil, Melted
  • 3 Apples, Diced
  • 1/2 Tsp. Cinnamon
  • 1/4 Tsp. Ground Nutmeg
  • 1/8 Cup Pure Maple Syrup
  • 1/4 Cup 100% Orange Juice
  • 1/4 Cup Raisins or Dried Cranberries (optional)
  • Low-fat Plain Greek Yogurt (optional)


Put nuts, dates and oil in a food processor and blend until ground but not completely smooth.. Press into a 9" pie pan. Put apples in a pot with 1/2 Cup water. Cover and cook for about 15 min. on medium heat until apples are just soft. Drain apples and let them cook. Mix in cinnamon, nutmeg, syrup, orange juice and raisins and stir. Add apple filling into pie crust. Refridgerate until ready to eat. When serving top with a spoon full of yogurt
