2 large chicken breasts (approx 1 pound)

2 tbsp Mirim (rice cooking wine)

2 tbsp Soy saue or 1 tbsp Braggs

1 tbsp Sesame oil 

8 ounces Shitake mushrooms - sliced

2 green onions - chopped

2 cups Bok choy - sliced

3 cups cooked Rice/ Quinoa

1 avocado - chopped

½ cup fresh basil - chopped

1 cup shredded red cabbage



Cook rice/quinoa according to package. Mix together Miriam and soy sauce. Slice chicken breast in bite size pieces. Put pan over medium heat and add 1 tbsp sesame oil. When hot add chicken and cook for 3 min.  then add bok choy and mushrooms. Cook for 3 min and flip. Turn down to low and cook 5 min or until chicken is just done. Place rice/quinoa in a bowl. Top with chicken, bok choy and  mushrooms. Add shredded cabbage. Sprinkle with basil and avocado.
