- 12 Slices of Turkey
- 1 Large Avocado
- 12 Asparagus Spears
- 1/3 Cup Hummus (if you can find Lemon Hummus it's my favorite for this recipe)
Bring a pot of water to a low boil. Cut off bottom 1/4 of asparagus spears. Put asparagus in simmering water. Cook for about 5 min. or until crisp tender. Immediately, rinse asparagus in cold water to stop cooking process. Spread a thin layer of hummus over turkey. Slice avocado into 12 pieces. Place asparagus spear and avocado slice on top of turkey and roll. Push toothpick through turkey to hold in place.
