• 4 Boneless, Skinless Chicken Breast
  • 2 Cups Tomatoe Puree
  • 1 tsp Dried Basil
  • 1 tsp Dried Oregano
  • 1/2 Crushed Red Pepper
  • 1/2 Cup Diced Fresh Basil (optional)
  • Add Sliced dairy-free cheese to melt if you prefer for a mock chicken parmesan.


Fill a medium size pot halfway with water. Heat water on high heat until water is simmering. Add chicken breasts and turn water to medium. Cover pot and cook chicken breasts for approx. 20 minutes of just cooked throughout. (I like to cook the chicken in water because it keeps the chicken moist).

Place chicken breasts in a baking dish. In a bowl mix together tomato puree, basil, oregano and red pepper. Pour red sauce over chicken.  Sprinkle basil over chicken and serve.
