• 1 tbsp oil
  • 3 pounds boneless chuck roast
  • 1 tbsp salt 1 tbsp chili powder
  • 2 tsp garlic powder
  • 1 tsp cumin 
  • 1 tsp paprika
  • 1 tsp pepper
  • 1 lime
  • 1.5 cups beef broth
  • ½ cup fresh cilantro


Combine all seasonings and season roast on all sides. Heat 1 tbsp oil in Instapot or in large skillet. Sear roast on all sides for about 1 min each side, then put in slow cooker. Cover with broth and slow cook for 8-9 hours. Shred meat with two forks (pull meat apart), and squeeze with juice of one lime. Top with fresh cilantro.
