2 cups mixed greens or power greens
1 cup cooked beets (can be found prepared in produce section), chopped
2 oz. goat cheese, crumbled
1-2 Tbsp. Chopped Hazelnuts (optional)
1.5 Tbsp. Extra Virgin Olive Oil
2 Tsp. Balsamic or Apple Cider Vinegar
Salt & Pepper
Chop beets. Toast chopped hazelnuts slightly in a hot pain, careful not to burn. Mix olive oil and vinegar, add salt and pepper to your liking. Toss all ingredients together for a yummy salad for 2-3 people.
