• 2 cups mixed greens or power greens
  • 1 cup cooked beets (can be found prepared in produce section), chopped
  • 2 oz. goat cheese, crumbled
  • 1-2 Tbsp. Chopped Hazelnuts (optional)
  • 1.5 Tbsp. Extra Virgin Olive Oil
  • 2 Tsp. Balsamic or Apple Cider Vinegar
  • Salt & Pepper


Chop beets.  Toast chopped hazelnuts slightly in a hot pain, careful not to burn.  Mix olive oil and vinegar, add salt and pepper to your liking.  Toss all ingredients together for a yummy salad for 2-3 people.
