• 2 cups diced beets
  • 1/4 cup olive oil
  • 1/4 cup balsamic
  • 1/4 cup diced red onion
  • salt to taste
  • goat cheese (optional)


To cook the beets, first cut off the green tops and wash the beets, peeling off the rough, outer layer with a vegetable peeler. Then, slowly simmer the beets in for 40-60 minutes until a knife can go into it easily. Drain the beets and cut up into bite-sized pieces. Mix in oil, vinegar, onion and then you can crumble goat cheese on top and enjoy!!!
