1 cup olive oil

1 large garlic clove - peeled and chopped

1 tbsp fresh lemon juice

1/2 - 1 tsp crushed red pepper

1/2 cup chopped fresh parsley

salt to taste


Heat oil over low/medium heat. Add garlic and cook for about 3 minutes. Add crushed red pepper. When garlic turns light golden color remove from heat. Let slightly cool and add lemon juice. When it is at room temperature add fresh parsley and salt (don't add parsley when warm or it will wilt the parley)

Use over roasted vegetables, fish, chicken, eggs, bread, baked potato - use over just about everything. Also makes a wonderful salad dressing by adding 2/3 cup balsamic vinegar.
