This isn't like many of my other recipes that are loaded with vegetables and lean protein but my family loves biscuits and gravy so I made some adjustments to the typical recipe. My kids & husband loved this!

Biscuits

  • 2 Cups whole wheat flour
  • 3 Tblsp olive oil
  • 1 Tlsp Baking Powder
  • 1 Cup Milk

Gravy

  • 1.5 pounds ground Italian or breakfast lean sausage (Boulder Brand is great if you can find it)
  • 3 Tblsp Ground Flax Seed
  • 1 Cup low-fat plain Greek yogurt
  • 1 Cup Milk

Directions:

Preheat oven to 450°.  Mix together all biscuit ingredients until all mumps are gone. Place heaping spoonful of dough on cookie sheet lines with foil. Bake for 10 minutes

Put sausage in a pan. Cook over medium heat. Break up meat into small pieces as it cooks. When meat is almost done sprinkle 3 table spoons of ground flax seed over meat and stir well. Add yogurt and milk. Cook over low heat for 5-7 more minutes.

Slice biscuits in 1/2 and pour gravy over.
