• 12 baby carrots (about 2 large carrots)
  • 4 eggs
  • 1 green onion
  • 2 tbsp feta cheese (optional)
Preheat oven to 350. Grease muffin pan. Put carrots and eggs in blender. Blend until carrots are the size of rice. Thinly slice green onion and stir into eggs. Add salt and pepper to taste. Pour egg mixture into muffin tin (makes 4 small or 2 large muffins) Top with feta crumbles. Cook for 15 minutes or until eggs are set.
Option to save time: pour egg mixture into oiled pan and scramble.
