INGREDIENTS:

  • 1 cup chicken broth
  • 1 cup diced canned tomatoes, drained
  • 1 small onion, cut into bite sized pieces
  • 2 red peppers, cut into bite sized pieces
  • 1 lb boneless, skinless chicken breasts, cut into bite sized piece
  • 2 tsp Hungarian Paprika
  • 1 tbsp Olive Oil
  • 1/2 tsp. Caraway seed (optional)
  • 3 tbsp Sour Cream (more or less to taste)
  • 1/3 Cup Plain Yogurt
  • 1/4 Cup Fresh Parsley, Minced

INSTRUCTIONS:

Add olive oil to a large pan and heat over med/high heat. Add chicken, stir and cook for 7-10 min. Add paprika and stir well. Add onions, peppers and broth and cook uncovered for 10 minutes. Add tomatoes, sour cream, yogurt and caraway seeds. Stir well and cook until heated. Add salt and pepper to taste. Place in bowls and sprinkle 1 tbsp fresh parsley over each serving.
