- 2 Organic Corn or Whole Wheat Tortillas (use corn for gluten-free)
- 4 oz. Sliced Chicken
- 1 Cup Quinoa
- 1/2 Cup Salsa
- 2 Tblsps. Low-fat Plain Yogurt (or substitute dairy-free yogurt)
- 1 Tomato, Diced
- 1/2 cup diced lettuce, spinach or kale
Mix chicken, quinoa, salsa, yogurt, lettuce and tomato. Place tortilla on a plate and put 1/2 of all ingredients in the middle. Roll up the tortilla and do the same with the 2nd tortilla.
