• 2 Organic Corn or Whole Wheat Tortillas (use corn for gluten-free)
  • 6 oz. Sliced Chicken or Pork
  • 1/4 Cup Quinoa, uncooked
  • 1/2 Cup Salsa
  • 2 Tbs. Low-fat Plain Yogurt (or substitute dairy-free yogurt)
  • 1 Tomato, Diced
  • 1/2 cup diced lettuce, spinach or kale
  • 2 Tortillas


Mix pork (or chicken), quinoa, salsa, yogurt, lettuce and tomato. Place tortilla on a plate and  put 1/2 of all ingredients in the middle. Roll up the tortilla and do the same with the 2nd tortilla.
