Ingredients:

  • 3 Cups Cooked Quinoa
  • 2 cups cooked, boneless, skinless chicken breast, chopped
  • 1/2 cup chopped cucumbers
  • 1/2 cup chopped celery
  • 1/2 cup green onion, sliced
  • 1/2 cup fresh cilantro,  chopped

Dressing

  • 1 clove garlic, minced
  • 1/2 cup white wine vinegar
  • 1/4 cup olive oil
  • 1 tsp cumin
  • 1 tbsp fresh lime juice

Directions:

Cool quinoa to room temperature and add chicken, cucumbers, celery, onions and cilantro. Stir well. In a separate bowl and all dressing ingredients. Stir well or blend. Pour dressing over couscous. Refrigerate or enjoy at room temperature.
