Ingredients

  • 1/2 tsp grated orange rind
  • 2 tsp fresh orange juice
  • 1 tbsp extra-virgin olive oil
  • 1/2 tsp ground cumin
  • 1/4 cup shelled dry-roasted, unsalted pistachios
  • 2 Tblsp. white wine vinegar
  • 2 cups roasted beets
  • 6 Cups arugula Salad or your favorite lettuce

Directions

Combine first 4 ingredients; stir with a whisk. Roast beets according to recipe. Peel beets and cut into bite size pieces. Divide lettuce among 4 plates. Add beets and dressing.
