Ingredients:

  • 3 cups corn kernels
  • 1/4 cup green onions, thinly sliced
  • 1 tblsp fresh thyme
  • 1.5 cups milk
  • 3 eggs, beaten
  • 1/4 cup low-fat plain yogurt
  • salt and pepper to taste

Directions:
Preheat oven to 350°. Combine all ingredients in a large bowl and stir well. Pour into an 11 x 7 inch baking dish. Bake for 50 minutes.
