1-2 cups roasted vegetables (to roast, cut into large bite size pieces, toss in olive oil, salt and pepper and roast on baking sheet at 400 degrees for approx. 20 min, tossing at 10 min) - time will vary depending on what vegetables you use.

  • Suggested vegetables: brussels sprouts, zucchini, broccoli, cauliflower, yellow or orange bell pepper, onion, garlic

1 small chipotle pepper in adobo sauce (optional, use with caution - a little goes a long way) - can be found canned at your grocery store

2 eggs

1/3 cup plain Greek yogurt

1 tbsp water

Salt & Pepper

1/4 Lime

Chopped cilantro to taste


Roast vegetables.   Fry or poach eggs to desired liking.  Combine Greek yogurt, chopped cilantro, and juice of 1/4 lime, adding water to reach desired consistency for topping. Salt and pepper to taste.    Serve roasted veggies with egg on top and a dollop of the topping.
