• 1/2 Lb. Whole Wheat Fettuccine or Other Noodle
  • 1 Red Pepper, Chopped
  • 1/2 Cup Vegetable Broth
  • 2 Tblsp. Fresh Lemon Juice
  • 1 10 oz. Bag Fresh Spinach Leaves
  • 3 Cloves Garlic
  • 1/2 Cup Chopped Walnuts or Pine Nuts
  • 1/4 Cup Parmesan Cheese
  • 1/2 Cup Fresh Basil, Chopped


Fill large pot with water. Bring to a boil and add fettuccini and stir. Cook for 5 min. and add chopped peppers to water with noodles. Continue cooking until noodles are done, about 4 more min. Drain noodles and peppers. In a blender add broth and lemon juice 1st then spinach, garlic, nuts and cheese. Blend until almost smooth. Pour sauce over hot noodles and put of plates. Sprinkle with fresh basil and additional parmesan if desired.
