Ingredients:
- 1 tblsp. olive oil
- 2 cups chopped onions
- 4 cloves garlic, minced
- 1 cup carrots, thinly sliced
- 1 cup celery, thinly sliced
- 1 jalapeƱo pepper, seeded and diced into very small pieces
- 4 cups vegetable broth, low-fat, low-sodium organic
- 2 cups potatoes, diced (red, gold, sweet your choice)
- 1 cup dry white wine (can replace with 1 more cup of broth)
- 1 15 ounce can crushed tomatoes
- 1 pound halibut or other favorite wild caught fish in bite-size pieces
- 1/2 pound peeled, deveined shrimp
- 2/3 cup fresh cilantro leaves, chopped
Directions:
Heat oil over medium heat and then add next 5 ingredients. saute for 4 minutes, stirring occasionally. Add broth, potatoes, wine and tomatoes and cook covered for 10 minutes. Add fish and shrimp and cook 5 minutes or until fish is cooked. Ladle into bowls and top with chopped cilantro.
