Ingredients:

  • 1 tblsp. olive oil
  • 2 cups chopped onions
  • 4 cloves garlic, minced
  • 1 cup carrots, thinly sliced
  • 1 cup celery, thinly sliced
  • 1 jalapeƱo pepper, seeded and diced into very small pieces
  • 4 cups vegetable broth, low-fat, low-sodium organic
  • 2 cups potatoes, diced (red, gold, sweet your choice)
  • 1 cup dry white wine (can replace with 1 more cup of broth)
  • 1 15 ounce can crushed tomatoes
  • 1 pound halibut or other favorite wild caught fish in bite-size pieces
  • 1/2 pound peeled, deveined shrimp
  • 2/3 cup fresh cilantro leaves, chopped

Directions:

Heat oil over medium heat and then add next 5 ingredients. saute for 4 minutes, stirring occasionally. Add broth, potatoes, wine and tomatoes and cook covered for 10 minutes. Add fish and shrimp and cook 5 minutes or until fish is cooked. Ladle into bowls and top with chopped cilantro.
