Ingredients:

  • 1 cup pitted prunes or dates
  • 2/3 cup boiling water
  • 1 cup cacao powder  (Can sub cocoa powder but cacao has more nutrients)
  • 4 large eggs
  • 2 Tbsp maple syrup (can sub honey)
  • 1 tablespoon vanilla extract
  • 1 cup dark chocolate chips
  • 2 cups chopped strawberries
  • 2 cups blueberries

Instructions:

Place dates 0r prunes in a glass dish and pour 2/3 cup boiling water over them. Let them sit for 15 min.  Preheat oven to 350ºF. Grease an 8 x 8 baking dish or line with parchment paper.  Put dates/prunes and the liquid into a blender. Add eggs, maple syrup, vanilla and blend until smooth. Add chips and blend until almost smooth. Pour into a bowl and stir in cacao powder. Pour the batter into prepared baking dish. Put in oven and cook for about 35 minutes or until batter is set.

Once it cools, top with berries and enjoy. Make sure to only have a small serving as their  is some added sugar. Option: place the berries in a pan, cover and cook over low heat. Stir every few minutes until berries are soft and juicy.
