A healthy, super simple side dish! It has few ingredients, most of which you may already have on hand and it can be thrown together in under 10 minutes!
Ingredients:
- 1 15-ounce can of black beans
- 1 15-ounce can of kidney beans
- 2 cups of corn
- ΒΌ cup green chilies
- 2 cloves garlic
- 1 T. olive oil
- 2 tsp. chili powder
- 1 tsp. salt
- 1 T. fresh cilantro (optional)
Directions:
- Add the olive oil to a saucepan. SautΓ© the garlic until browned.
- Drain and rinse the beans and corn. Add to a saucepan on medium heat for 5 minutes.
- Add the green chiles, chili powder, and salt and stir well.
- Thatβs it! Put in a nice bowl and it is ready to serve! If using cilantro, finely chop and sprinkle on top. Enjoy!
