• 1 head cauliflower (or already made cauliflower rice - 4 cups)
  • 2 large chicken breasts (approx. 1 pound)
  • 2 tbsp lemon juice
  • 1 tsp dried Oregano (divided)
  • 1 cup diced cucumbers
  • 1 cup diced peppers
  • 2 cups diced tomatoes
  • ½ cup kalamata olives
  • ½ cup feta cheese
  • ¼ cup Balsamic Vinegar
  • ¼ + 2 tbsp olive oil 


Cut the chicken into bite size pieces. Put 1 tbsp olive oil in pan. Place chicken, lemon juice and ½ tsp oregano in a pan and cook over medium heat for about 7 minutes. Take small chunks of cauliflower at a time, put in blender and blend. Continue to add chunks of cauliflower, and blend until your cauliflower is the size of rice. Put 1 tbsp oil in separate pan. Add the cauliflower and salt. Cover and cook for about 5 min or until just soft. Put the “rice” in each bowl. Top with cooked chicken and then with artichoke, tomatoes, olives, and feta. Mix together the vinegar and remaining oil and oregano and pour over bowls.
