Ingredients:

  • 1 head of romaine lettuce, chopped
  • 1/2 cup fresh mint, chopped
  • 1/2 cup fresh parsley, chopped
  • 1 cup garbanzo beans, drained and ideally organic
  • 2 tomatoess, diced
  • 1/2 cup Kalamata olives
  • 1/2 cucumber, sliced thin
  • 1/8 cup olive oil
  • 1/8 cup red wine vinegar
  • 2 boneless, skinless chicken breast, chopped
  • sea salt and pepper to taste

Directions:

Put all ingredeints into a large bowl. Toss well and serve
