Ingredients:
- 1 head of romaine lettuce, chopped
- 1/2 cup fresh mint, chopped
- 1/2 cup fresh parsley, chopped
- 1 cup garbanzo beans, drained and ideally organic
- 2 tomatoess, diced
- 1/2 cup Kalamata olives
- 1/2 cucumber, sliced thin
- 1/8 cup olive oil
- 1/8 cup red wine vinegar
- 2 boneless, skinless chicken breast, chopped
- sea salt and pepper to taste
Directions:
Put all ingredeints into a large bowl. Toss well and serve
