• 1/4 cup vegetable broth or 1 tblsp high heat oil
  • 1 green pepper, chopped
  • 2 cloves garlic, minced
  • 3 ¬†tomatoes, seeded and diced
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 3 green onions sliced, including green stem
  • 1/8 teaspoon black pepper
  • 1 pound peeled and deveined medium shrimp
  • 1/3 cup fresh parsley, chopped
  • 1/2 cup crumbled feta cheese (omit or substitute with dairy-free cheese)
  • 2 cups cooked orzo (replace with quinoa to make gluten-free)


Add broth to a pan and heat until simmering. Add green pepper and garlic and cook for 3 minutes. Add tomatoes, oregano, paprika, green onions and pepper. Stir together and cook covered for 2 minutes. Add shrimp, cover and cook for 3 minutes or until shrimp are cooked throughout. Put orzo on plates and top with shrimp and sprinkle with feta and parsley.
