Ingredients:

  • 1 tsp olive oil
  • 1 large zucchini
  • 1/4 cup chopped onion
  • 1/4 lb ground beef (can use ground chicken or sausage)
  • 1/4 tsp cinnamon
  • 1/2 tsp oregano
  • 1/2 c tomato sauce
  • 1 tbsp chopped kalamata olives
  • 2 tbsp crumbled goat cheese (optional)

Directions:

Slice zucchini lengthwise. Scoop out the inside of zucchini using a small spoon or a small knife cutting down at an angle toward the center. Take the part you scooped out and finely chop.

Put oil in a pan over medium heat. Add chopped onion and cook until golden brown (about 4 mins). Add the chopped zucchini that you scooped out and the ground beef to the pan. Chop meat into small pieces while browning. When meat is fully cooked, add the cinnamon, oregano, tomato sauce and olives. Cook over low heat for 5 minutes and remove from heat.

Place zucchini halves on a baking sheet and fill with meat mixture. Top with crumbled goat cheese. Preheat oven to 375 degrees. Cover with aluminum foil and cook for 20 minutes. Uncover and cook for an additional 10 minutes.
