Looking for a fun, easy to make appetizer? Want to have a dinner party that doesn't keep you in the kitchen all day? Warmer weather always makes me want to put things on the grill. Not only do I think food tastes better from the grill but my husband is also a great griller. These pizzas make a great appetizer or are super fun and easy for a dinner party.
Ingredients:
- 4 Organic Whole Wheat Large Tortillas
- 1 can tomato paste
- 1 tsp dried oregano
- 1 tsp crushed red pepper flakes
- 8 oz. Fresh Mozzarella Cheese (ask your deli manager for FRESH mozzarella)
- 4 Roma Tomatoes, Thinly Sliced
- 1/2 Cup Fresh Basil, Chopped
Directions:
Mix tomato paste oregano and red pepper flakes. Cover top of tortilla with tomato paste. Cover with cheese and tomato slices. Heat grill to low, spray grill with cooking oil or brush with oil. Place tortilla (cheese side up) on grill. Cover and cook until tortilla bottom browns and cheese melts. Remove from grill sprinkle basil over pizza, slice and serve. You can also cook in preheated 350° oven for 12 minutes.
If you want to make it for a dinner party let your guests design their own pizzas. Place out additional ingredients like spinach, olives, onions, peppers, eggplant and different types of cheeses. Guests can create their favorite pizza. The tortillas make it a very light and even healthy meal - especially when you load it up with the vegetables!!
Serves as an appetizer for 8 or a meal for 4
