• 3 cups of prepared couscous
  • 2 cups of packed arugula or spinach
  • 1 cup of diced tomatoes
  • 1/2 cup of feta cheese
  • 1/4 cup of diced onion
  • Juice of 1/2 lemon
  • 1/3 cup olive oil
  • Salt and pepper to taste
  • can also be good with a bit of balsamic vinegar over drizzled over the top.


Cook your cous cous according to the directions on the package. Put cous cous into a larger bowl, and mix in your arugula or spinach, tomatoes, feta cheese, onion, lemon juice, olive oil, and salt and pepper. Mix everything well, and then serve or let chill for 1 hour.
