Ingredients:
4 cups berries (I used blueberries but can use blackberries, raspberries, strawberries)
1/3 cup fresh lemon juice
1 tbsp lemon zest
1/3 cup chia seeds
Directions:
Put berries in a pot and cook over medium heat for about 5-7 minutes until berries have softened and juice is released. Add lemon juice and zest and put in blender. Blend until almost smooth but leave a little bit of chunks. Pour back into pot and stir in chia seeds. Cook over low heat for 3 minutes and stir continuously. Leave in pan and stir every few minutes until jelly. After 10 minutes pour into jars and when it is room temperature put the lid on the jar and put in fridge. (If you are just beginning to wean yourself from sugar you could add 1-2tbsp pure maple syrup or honey but I think it tastes best without any added)
