Ingredients:

  • 1 large chicken breast or 2 small thighs
  • 1 egg
  • 1/3 cup corn meal
  • 1/2 cup bread crumbs
  • grapeseed oil or avocado oil
  • herbs to top

Directions:

Whisk egg for egg wash. Butterfly chicken to create thinner piece of chicken to allow faster cooking time. Coat chicken in corn meal, then the egg wash then finally in bread crumbs (make sure to coat both sides!). Place chicken in pan with 1 tablespoon of oil in of oil and cook, flipping the chicken occasionally so as not to burn. Top with some sprigs of herbs (parsley is pictured) and enjoy!
