• 1/8 cup Vegetable broth
  • 1 small potato diced into small cubes
  • 1/2 cup black beans, drained and mashed
  • 2 eggs
  • 1/8 cup salsa
  • 1/4 cup chopped cilantro
  • 5-6 tortilla chips
  • salt and pepper to taste


Put broth in a small pan and heat over medium/high heat. Add potatoes cover and cook for 15 minutes. Stir in mashed beans and salsa. Crack eggs and place on top of potato and beans. Turn heat to low and cover. Cook for until eggs have set, approx. 7 min. Place on plate, add chopped cilantro and serve with tortilla chips.
