• 2 tbsp. butter or oil
  • 1 small onion, chopped
  • 1 bell pepper, chopped
  • 1 clove garlic, minced
  • 16 oz  andouille sausage
  • 1 can diced tomatoes
  • 1 tbsp. Cajun seasoning
  • 2 cups cooked rice
  • 1/2 cup fresh parsley
  • Hot Sauce (optional)


Add butter/oil to pan and cook over medium heat. When pan is hot add onion, pepper and garlic. Cook for 5 minutes. Add sausage and cook additional 3 minutes. In a separate bowl add diced tomatoes and cajun seasoning, stir. Add cooked rice and stir well. Add rice mixture to pan with vegetables and sausage. Stir well, cover and cook over low heat for 5 minutes (or until heated) 

Dish onto plates and sprinkle with fresh parsley and hot sauce.
