Ingredients:

  • 1 cup of fresh parsley, stems removed
  • 1 tablespoon of lemon zest
  • 1 tablespoon of lemon juice
  • 1/4 of freshly grated Parmesan cheese
  • 2 cloves of garlic, peeled
  • 1/2 tsp. crushed red pepper flakes
  • 1/3 cups walnuts, shelled and chopped
  • 2 tablespoons of olive oil
  • 1 lb. fish of your choice

Directions:

Put all ingredients, except the fish, into a blender and pulse until somewhat smooth. Grill the fish and top with parsley pesto! Combine the basil, lemon zest, lemon juice, parmesan cheese, and garlic in a food processor. Blend. Add the olive oil and puree until smooth and incorporated
