• Olive oil 1/3 cup
  • 8 ounce package gnocchi
  • 4 garlic cloves -- minced
  • asparagus (1/2 pound), trimmed and cut into thirds
  • 1 red pepper diced
  • 1/3 cup reduced-sodium chicken broth
  • 1/2 pound shrimp cut into bite size pieces
  • 2 tablespoons lemon juice
  • 2 tbsp grated Parmesan cheese
  • 1/4 cup chopped fresh parsley leaves


Bring pot of water to a boil. Add asparagus, and peppers and cook for 4 minutes. Add gnocchi and cook for 2 minutes. Then add shrimp and cook for an additional 2 minutes. Strain. In the same pan add olive oil and place over medium heat. Add minced garlic, stir and cook for 2minutes. Turn off heat and stir in broth, lemon juice, gnocchi and vegetables. Plate and then top with cheese (optional) and parsley.
