• 1 pound fish
  • 2 tbsps lemon juice
  • 2 tbsps flour
  • 4 tbsps olive oil (divided)
  • 4 cloves garlic
  • 2 cups grape tomatoes cut in half
  • 1 avocado - diced
  • 1 green onion
  • Zest from one lemon
  • Fresh basil
  • 20 oz zoodles
  • Parmesan ribbons (optional)


Dust fish in flour. Heat 1 tbsp olive oil in a pan. When hot add fish. Cook until golden and flip. Cook for another 3-5 min. Set aside. In a separate pan add 1 tbsp olive oil. When hot add garlic and cook until almost golden. Add zucchini noodles, lemon zest and juice cook for about 4 min or until “noodles” are soft. In a separate bowl combine tomatoes, avocado, onion, 2 tbsps olive oil, salt and pepper. Place noodles on a plate and top with fish. Add cover with tomato mixture. Top with fresh basil & Parmesan ribbons.
