If you are watching your carbs (and even if you aren’t), and you get a craving for a big, juicy, bacon cheeseburger, this is the recipe for you! This tastes like you are eating a cheeseburger! You can serve it with the regular condiments you enjoy on a burger, such as, pickles, onions, ketchup or mustard. It is delish! Dig in!

Ingredients:

  • 2 lb lean ground beef
  • 1/2 cup minced onion
  • 2 cloves of garlic, minced
  • 1/2 t onion powder
  • 4 slices bacon, cooked, drained and crumbled
  • 8 eggs, beaten
  • 1/2 t salt
  • 1 cup half and half
  • 2 cups shredded cheddar cheese

Directions:

Preheat the oven to 350. Brown the beef in a large skillet with the onion, onion powder, garlic and salt and pepper to taste. Drain off excess fat. Place the beef mixture in a 9x13 casserole dish.

In a bowl, whisk the eggs, 1/2 t salt, half and half, and 1 1/2 cups of the cheddar cheese. Bake for 20 minutes at 350, then sprinkle on the remaining cheese and cooked, crumbled bacon. Cook 10-15 minutes more or until it is set. Yummy! Serve with your favorite cheeseburger condiments! Enjoy!
