• 5 large eggs
  • 1/8 tsp garlic powder
  • ¼ bell pepper, chopped
  • Salt and pepper to taste
  • 2 tbs yellow onion, chopped
  • ½ cup shredded cheese, any kind

Preheat oven to 350°. Combine eggs, garlic powder, salt and pepper in bowl. Whisk to combine.

Spray cooking spray in 6 muffin wells of a muffin tin. Divide the red pepper, onion and then cheese in the 6 wells. Pour the egg mixture over the cheese. Bake for 2o minutes or until set.

Remove from cups and serve warm or let cool and refrigerate for up to 5 days.
