Ingredients:

  • 6 cups of raw cauliflower (about 1,medium-sized head)
  • 3/4 cup almond milk
  • 3 garlic cloves
  • 2 tablespoons olive oil
  • salt and pepper to taste

Directions:

Cut up cauliflower head and remove the core. Place cauliflower pieces in 2 inches of water in a medium to large pot. Cover pot and cook over medium heat until completely soft. Place garlic cloves into a food processor or blender with almond milk and olive oil and top with cauliflower. Blend until smooth (consistency of mashed potatoes). Spoon out into a bowl and serve with fresh parsley. Add salt and pepper as needed. Enjoy!
