- 6 cups of raw cauliﬂower (about 1,medium-sized head)
- 3/4 cup almond milk
- 3 garlic cloves
- 2 tablespoons olive oil
- salt and pepper to taste
Cut up cauliﬂower head and remove the core. Place cauliﬂower pieces in 2 inches of water in a medium to large pot. Cover pot and cook over medium heat until completely soft. Place garlic cloves into a food processor or blender with almond milk and olive oil and top with cauliﬂower. Blend until smooth (consistency of mashed potatoes). Spoon out into a bowl and serve with fresh parsley. Add salt and pepper as needed. Enjoy!
