- 4 Medium-Sized Sweet Potatoes or Yams
- 1/4 100% Orange Juice
- 1/2 Cup Low-fat Plain Yogurt (optional can also use dairy free substitution)
- 2 Tblsp. Olive Oil
- 1 Tsp Garam Masala or Cinnamon (Optional - gives it a little spice or sweetness!)
Bring a pot of water to a boil. Peel sweet potaotes, slice thinly and add to water. Cover and cook until potatoes are very soft but not falling apart. Drain and mash. Add remaining ingredients and stir. I like to make extra and make them into patties and cook them for breakfast!
