Ingredients:
- 1 15 oz can garbanzo beans[chick peas] (without BPA and ideally organic), drained and rinsed
- 2/3 cup chopped green onions
- 1/3 cup sliced olives
- 3 medium cloves, minced
- 1/4 cup sundried tomatoes, diced
- 3 TBS fresh lemon juice
- 1/4 cup chopped parsley
- 1/4 cup chooped fresh mint
- 1/4 cup olive oil
- 1/8 cup red wine vinegar
- 1/4 cup feta cheese
- 4 cups shredded romaine lettuce
Directions:
Put all ingredeitns in a large bowl and toss well.
