Ingredients:

  • 1 15 oz can garbanzo beans[chick peas] (without BPA and ideally organic), drained and rinsed
  • 2/3 cup chopped green onions
  • 1/3 cup sliced olives
  • 3 medium cloves, minced
  • 1/4 cup sundried tomatoes, diced
  • 3 TBS fresh lemon juice
  • 1/4 cup chopped parsley
  • 1/4 cup chooped fresh mint
  • 1/4 cup olive oil
  • 1/8 cup red wine vinegar
  • 1/4 cup feta cheese
  • 4 cups shredded romaine lettuce

Directions:

Put all ingredeitns in a large bowl and toss well.
