• 4 Eggs
  • 1 Cup Cottage Cheese (for DF use 2 oz. tofu and 1/2 cup coconut milk)
  • 1 Cup Oats (use gluten-free oats if needed)
  • 1 Tsp. Vanilla
  • 1/2 Tsp Cinnamon
  • 1 Tblsp 100% Pure Maple Syrup
  • Coconut Oil


Put all ingredients EXCEPT Coconut Oil in a blender and blend until smooth. Melt 1 Tsp. coconut oil in a med. size pan over med. heat. Cook until browned and then flip. Pour 1 tablespoon of the peach syrup over each pancake and enjoy!!

Makes approximately 8 pancakes
