Ingredients:

-1/4 cup pumpkin puree (no sugar added) 

-3 eggs

-1/4 cup coconut flour

-1 tablespoon coconut oil

-1 tablespoon cinnamon

-1 tablespoon maple syrup (can substitute honey)

Directions:

Blend all ingredients, except for the coconut oil, together, and use as the pancake batter! Use the coconut oil on the pan to heat up before you cook your pancakes on medium heat. Cook pancakes on stove however you’d like, making sure to flip and cook both sides. Top with cinnamon if you’d like!
