Ingredients:

-1/3 cup pumpkin puree (no sugar added) 

-3 eggs

-1/4 cup flour (gluten free works too)

-1 tablespoon coconut oil or butter

-1 tsp cinnamon

-1 tablespoon maple syrup (can substitute honey)

Directions:

Blend all ingredients, except for the coconut oil, together, and use as the pancake batter! Use the coconut oil on the pan to heat up before you cook your pancakes on medium heat. Cook pancakes on stove however you’d like, making sure to flip and cook both sides. I love to top mine with some diced, cooked apples and extra cinnamon if you’d like! No need to add more syrup since it's already has a little in the batter!
