INGREDIENTS:
  • 2 cups of cooked quinoa
  • 1/2 cup of shredded carrots
  • 1/2 cup of peas
  • 1/2 cup of chopped red peppers
  • 1/2 cup Lupini Beans, aka Chocho beans. (optional can sub. garbanzo beans)
  • 1 tablespoon of fresh parsley (less if dried)
  • 1 tblsp olive oil
  • 1 tbsp fresh lime/lemon juice to taste
  • salt & pepper

INSTRUCTIONS:

Boil 2 cups of liquid (water or broth) for every 1 cup of quinoa. Cook the quinoa until soft and then mix in all your additional ingredients. You can garnish with a few tomatoes or a lime, and then you can enjoy!
