Ingredients:

  • 2 tbsp extra-virgin olive oil 
  • 1 tbsp white wine vinegar
  • 2 tbsp fresh orange juice
  • 2 Cups cooked organic brown rice
  • 2 cups cooked  boneless, skinless chicken breast
  • 1/2 cup chopped fresh basil
  • 1/4 cup shelled pistachios 
  • 2 ounces fresh mozzarella cheese, bite-sized pieces
  • 2 tomatoes, diced

Directions:

Combine first 3 ingredients in small bowl and whisk. Combine remaining ingredients in large bowl. Toss well. Add dressing and stir. Serve room temperature or cold.
