• 8 rice paper sheets
  • 1 cup shredded carrots
  • 1 cup thinly sliced cucumbers
  • 2 cups lettuce
  • 1 cup thinly sliced peppers
  • 1 cup fresh cilantro


Fill a large pan 1/3 way with water. Warm the water but do not boil. Add rice sheet into water, holding onto one edge. When rice sheet is slightly softened remove from water and put on plate. Add carrots, cucumber, lettuce, peppers, cilantro. Fold in sides and roll. Serve with Peanut Sauce. 

Peanut Sauce:

  • 1/3 cup peanut butter (smooth or chunky)
  • 2 tbsp rice vinegar
  • 1 tbsp soy sauce or liquid aminos
  • 1 tbsp siracha
  • 1/3 cup coconut milk 

Mix all ingredients together and stir well.
