• 1 lb. Turkey or Elk Italian Sausage - Sliced Into Bite Size Pieces 
  • 1 Red Pepper - Diced
  • 1 Yellow Pepper - Diced
  • 1 Large Onion - Diced
  • 1 Tblsp. Dried Oregano
  • Ground Black Pepper To Taste
  • 1/2 Cup Water


Put water in a large pan and add sausage and then on top of sausage add peppers and onions. Cover and cook over medium heat for approx. 20 min. Check 1/2 way through cooking process to see if you need to add more water (water should just cover the bottom of the pan). Remove lid and add oregano and pepper and stir. Cook additional 5 min. Drain excess liquid. If going on a picnic put hot sausage and peppers into a large glass container (I used an empty, very large pickle container). Wrap jar in foil to keep warm.
