• 1/3 Cup Vegetable Broth (Make sure it's gluten-free like Pacific brand if you are sensitive to gluten)
  • 3 Cloves Garlic, Minced
  • 2 Tblsp. Fresh Lemon Juice
  • 1.5 Pounds Spinach Leaves
  • 1 Tblsp Olive Oil
  • Salt and Pepper to Taste


Rinse the spinach leaves and then dry in salad spinner or clean towel. Add broth to a large pot and cook over medium heat. When broth is simmering add garlic and cook for 2 min. Add lemon juice and spinach and stri. Cover the pot, turn the heat to high and cook for 2 min. Uncover and cook for another minute or until all spinach is wilted. Use tongs to get spinach out of pot and into serving bowl. Drizzle olive oil and add salt and pepper. Stri and serve.
