Ingredients:
1 pound salmon cut into 4 pieces
2 tbsps oil (divided)
1 tsp cajun seasoning
2 tbsp fresh lemon juice
2 sweet potatoes (cooked)
⅔ cup diced celery
⅔ cup diced onions
4 eggs (optional)
Directions:
Sprinkle salmon with 1 tsp dill. Put 1 tbsp oil in cast iron pan. Put over high heat. Once pan is very hot, add salmon fillets. Cook for 2 min and once the salmon releases from the pan flip and cook until it reaches your desired doneness. Peel and cut sweet potatoes into bite size pieces. Put 1 tbsp oil into pan once hot add onions. Cook for 3 minutes and add celery and sweet potatoes. Cook for 4 minutes and stir after 2 minutes. Break salmon into bite size pieces, add to pan and stir. Add 4 eggs and place gently on top of salmon hash. Turn heat to low, cover and cook until eggs are just set.
